One of the amazing things about being vegan - other than being kind to animals and the planet - is that it has opened my eyes to some amazing recipes. Maybe it's being more careful about the ingredients and focusing more on what goes into my food but I truly believe I have eaten more tasty food as a vegan than I ever did as a vegetarian. I never really ate meat as an adult that cooked for myself so it's hard to compare that far back.

3. Whole Roasted Cauliflower with Pomegranate Tahini Sauce, Raisins and Hazlenuts
I absolutely love a whole roasted cauliflower. For me it's the most wonderful centrepiece. Taking a lets-face-it otherwise bland vegetable and making it the star of the show it wonderful and this Clean Eating Mag recipe does just that. The tahini sauce is delicious and the sweetness of the raisins and the pomegranate give it an extra zing!
4. Vietnamese Sticky Tofu
This Vietmese sticky tofu by the amazing Henry and Ian at Bosh is proof that tofu is not bland! Here the tofu absorbs the flavours of the moreish sauce and results in a mouth-watering meal. Give this to any meat eater and they’ll be sure to be converted to tofu.
5. Chickpea, Sweet Potato and Spinach Curry

I have wowed many a dinner guest with this vegan curry. The flavours and textures of the chickpeas, sweet potatoes and spinach go so well together and I like to spice it up with extra chillies to give it some more heat.
